Banana &

Coconut Bread


1 ripe banana 

2 tbsp olive oil

2 tbsp honey

2 beaten eggs

100g ground almonds

100g ground flaxseeds

25g coconut flakes

1 teaspoon baking powder

Preheat oven to 180 degrees

1. Mash banana and mix in olive oil, honey

    and eggs.

2. Add the almonds, flaxseeds, coconut          flakes and baking powder, then mix well.

3. Pour into the lined baking tin, spread out

    and bake at 180 degrees for

    approximately 30 mins, depending on


4. Remove from oven and baking tray

    immediately, and leave to cool before



    Banana & Coconut Bread will keep for 5

    days in a air tight container.
